Avoid takeaway this week by whipping up all your favourite Asian dishes at home, each with a healthy twist.
MONDAY
Turmeric, turmeric, turmeric. It’s the ingredient on everyone’s lips right now. Not only does it boast a host of health benefits but its vibrant colour also makes for some really good looking cooking. Christine Manfield’s chicken turmeric soup will not only have you feeling as balanced as Gwyneth Paltrow but this digestive soup is Asian comfort food at its very best. Plus, it’s one good looking soup, didn’t I tell you?
TUESDAY
Speaking of Gwyneth, we tried her Singapore rice noodles recipe and recommend that you do too, yep, we got Goop’d. Vegetarian and gluten-free, this is such a simple meal to whip up mid-week and is packed full of veggies and fragrant Asian spices. Feel free to add chicken or beef for extra protein or to bulk up your dish if you’re cooking for a crowd.
WEDNESDAY
Fish cakes are a family favourite, and this recipe for Thai fish cakes with quinoa is a healthy alternative that even those greasy, fried, cake fiends are going to love. Fish cakes are a great weeknight feed, paired with your choice of sauce or salad. They also go great on the weekend when you’re entertaining and need to feed fussy kids and adults alike. An all-round winner!
THURSDAY
I know this dish looks fancy, but I believe in you and you can pull it off. Yes, even on a weeknight. Have all the ingredients at home and ready to go, and these garlic prawn wontons in lemongrass and asparagus broth are going to take 30 minutes in total and the pride you’ll feel as you devour this meal will have you glowing well into the next morning.
FRIDAY
One of the healthiest ways to cook fish is to steam it. This Asian-style steamed snapper maintains all the integrity of a whole fish, infused with the Thai flavours of ginger, garlic and chilli that never disappoint. It’s an impressive task to tackle come Friday afternoon, but you’ll never be more excited by Fish Fridays after you add this recipe to your repertoire.
SATURDAY
Not all Asian-inspired meals need noodles. These lemongrass, coconut and chilli mussels are a healthy, fragrant seafood dish perfect for entertaining. Steam these in a large pot and serve to your guest family-style with some crusty bread to ensure no juices get left behind. Surprisingly this recipe does not call for any white wine, which I guess just means more will end up in your glass. That’s lucky, it is Saturday night after all.
SUNDAY
This zucchini Thai noodle salad from The Farm Cammeray in Sydney is so great for lazy Sundays. It’s a dish so simple, it barely even qualifies as cooking and can be eaten for lunch or dinner, or that mid afternoon meal you have when you’re wrapped up in Sunday-feels and don’t know what time it is or who you are anymore. Same with the Gwyneth noodles, feel free to add chicken or beef strips for an added protein kick, or even just some marinated tofu if you prefer to keep it vegan.
