Two men, wearing hoods and masks, entered a service station on Canterbury Road, Campsie, just after midnight.
The men attempted to kick in the office door before producing a knife and threatening the 63-year-old employee and demanding cash.
CCTV shows the men brandishing a large kitchen knife and threatening the employee, Victor Habashi.
"One of them holds the knife and knocks the counter with the knife and loud voice 'give me the money, give me the money'," Mr Habashi said.
"I told him, 'I'll give you the money, I will give you the money'."
The Liverpool father-of-three can be seen desperately emptying the till as one of the men attempts to kick down a door.
"He threatened me again, I prefer to throw the money for him because this equal my life," Mr Habashi said.
The pair took $1000 cash and fled the scene.
Police have established a crime scene and are now seeking the public's help to identify the two men.
Both men are described as being about 175cm to 180cm tall, and wearing a black face covering.
One man is of a slim build and wearing a green hooded jumper, navy tracksuit pants, and white shoes.
The second man is of a solid build and wearing a black hooded jumper, black tracksuit pants, and black shoes.
Police have condemned the incident.
"The very small gain is minimal compared to the years in jail they will face," Detective Inspector Andrew Mackay said.
