London: It’s the Australian honey which has set Britain’s high society abuzz.

So good, they say, that shoppers in the world’s most famous luxury department store, Harrods, are paying more than $1000 a jar.

Billed as a new and healthier alternative of fine wine, the three varieties of Australian Rare – produced in Western Australia’s famed south-west biodiversity hotspot where more than 8000 rare species of wildflowers bloom – are limited to just 888 jars per batch. Each comes in an elegant gift box, an individually numbered jar with 22-carat gold writing, a handcrafted Australian timber lid and a hand-blown glass honey dipper.

“You know if you want good Champagne, you go to the Champagne region [of France]. If you want the great whiskey, you go to Scotland, and if you want the best honey in the world, it’s from south-west Australia,” the company’s co-founder Rick Bains says.

The Australian Rare exclusive collection first made the journey from the region blessed with the highest concentration of rare and endangered species in Australia to the fashionable shelves in London’s Knightsbridge last August. The ecoregion stretches from Shark Bay, around 800 kilometres north of Perth, to Esperance in the south covering 48.9 million hectares of land.

The nectar from the jarrah flower produces one of the world’s best honey. It’s perhaps why a 250 gram jar will set you back £750 ($1444).

Bains says the three flavours from native flowering trees, including Karri (£500 a jar) and Dwutta (£600), were selected by a team of honey sommeliers and scientists from hundreds of different batches – all made by partners from across the unique biodiversity hotspot to represent the best of every season.

“These honeys are exceptionally pure and full of the nutrition that only the very best honey possesses,” he says.
